They have a different chemical structure than sugars like table sugar, honey, or corn syrup. When the FDA measures “sugars” in a food, they count only monosaccharides and disaccharides, such as glucose, fructose, and sucrose (table sugar).The FDA recognizes this difference, which is why sugar alcohols get their own line on the Nutrition Facts panel. Under FDA regulations (21 CFR 101.60), a product qualifies as ‘zero sugar’ when it contains less than 0.5 grams of sugars per serving. Sugar alcohols are not counted as sugars under this standard because they are a fundamentally different ingredient.
